タカノハダイは臭い魚という事で有名ですが、海域や時期などによってそこまで気にならない様です。 1日程の短い熟成ならウロコをすき引きして頭を落とし、血合いも多いので落とし、水気を拭いて低い温度で保存しておけば、さばく時にも楽にさっとできて良いなと思いました。
