こんにちはLes sens cielです 今回はルビーチョコレートを使ってボンボンショコラを作ってみました もともと果物の様な爽やかな酸味があるルビーチョコレートとフランボワーズの相性は抜群です 色味も桜色で春らしい仕上がりになりました ルビーチョコレートは流動性も高く 比較的ボンボンショコラを作りやすいチョコレートだと思います ルビーチョコレートをお持ちの方は是非お試しください ベルギーにも最近桜が咲き始め そろそろチョコレートを作るには気温が高い季節になってきました 他の種類のボンボンショコラはまた涼しい季節になったら作りたいと思います Ruby chocolate raspberry ganache15g heavy cream35 crème fraîche35 45g raspberry puree purée de framboise15g corn syrup glucose125g ruby chocolate chocolat ruby17g unsalted butter beurre non salé ルビーチョコとフランボワーズのガナッシュ生クリーム35 15gフランボワーズピューレ 45g水飴 15gルビーチョコレート 125g無塩バター 17g動画で使っていた金粉は残念ながら日本では未発売です 僕が日本で使っていた金粉スプレーを紹介します 金箔スプレー 銀箔スプレー 今回使用しているチョコレートの型と同じもの視聴者様が見つけて下さいました 輸入品なのでお値段が少々お高めです 参考程度にして下さい ちなみに同じ形で違うメーカーの物も手頃な値段でアマゾンにありましたが 僕自身使ったことが無い商品なのでURLを貼るのは控えさせていただきます スパチュラ チョコを削ぐ時に使っているヘラ 一時的に入荷待ちになっていました 早く入荷してくれるといいのですが インスタグラムよかったらフォローよろしくお願いします
