《不萊嗯的烘焙廚房》柑橘塔 | Oranges Tart

 

材料 6 人份 9吋油酥塔皮一份 約320g新鮮柳橙汁 375g新鮮檸檬汁 130g柳橙皮屑 3顆 白砂糖 180g 鳳梨建議採用140g 玉米粉 45g蛋黃4顆 80g室溫奶油 100g 做法 全熟油酥塔皮製作這絕對是一份適合在炎熱夏季品嘗的法式風情柳橙塔 香甜的鮮果柳橙風味 藏在冰涼內餡裡 與大家可能已經熟悉的經典檸檬塔配方或做法 有相當大的不同 這份柳橙內餡製作中僅使用蛋黃 非全蛋 輔助以玉米粉幫助凝固作用 在加熱操作上顯得簡單許多 而為了凸顯鮮明的柳橙氣味 或其它適合製作的夏季水果 對於奶油添加用量明顯降低 味道也更為清爽 不萊嗯是將凝固重任擺在玉米粉與蛋黃這兩種材料上 研發出這份做法與比例配方時 也同時給了不同夏日水果 能直接變身成為水果塔內餡的機會 例如葡萄柚 鳳梨果泥 芒果泥 蜜桃果泥或百香果等等 會特別選出這些水果 是因配方裡所添加的玉米粉與蛋黃 不會干擾最終成品色澤 因此大家可以用這樣的概念來延伸 配方中的關鍵檸檬汁則不建議變動 無論想變換成哪種水果 檸檬汁所扮演的角色 除了有助於結晶凝固外 同時也讓品嚐者的舌尖 感受到更多天然果酸的風味 而不會僅有單一甜膩感
