奶油奶酪制作 Homemade Cream Cheese 主要是通过乳酸菌发酵奶油而制成的 乳酸菌的种类非常多 但是主要分为两大类 一类是嗜热菌种 thermophilic bacteria 它喜欢热的环境 而且口味偏酸 大多数酸奶中含有这种乳酸菌 其实你想想看 酸奶的原产地都是比较暖和的地方 另外一类是嗜温菌种 Mesophilic bacteria 它喜欢温和的环境 发酵温度不需要太高 它也有酸味 但是酸味比较柔和 用这种菌种发酵生产的奶酪通常原产地气候温和 甚至寒冷 奶油奶酪一般是用这种嗜温菌种发酵的 你在白脱牛奶中可以找到这样的菌种 没有白脱牛奶的话 你可以用酸奶代替 口味会偏酸一些 视频中我用的是脂肪含量18 的奶油 你可以用任何脂肪含量的奶油 你也可以用全脂牛奶来做 脂肪浓度不同 它的口感会有区别 但是都可以用来做奶酪 奶油奶酪的做法 鲜奶油 脂肪含量18 1升 你可以用任何脂肪浓度奶油来做 或者全脂牛奶 白脱牛奶 60克 1 4 杯或者用等量酸奶代替混合后放到室温 21 22摄氏度 发酵24 30 小时发酵凝固之后 放到纱布上控去液体 乳清 24 30小时拌入盐 4克 1 2 小勺冰箱冷藏2 3星期Cream cheese ingredients and steps Table cream 18 1 L You can use other creams or whole milk instead Buttermilk with active cultures 60 g 1 4 cupMix them and ferment it at the room temperature 21 22 C 70 72 F for 24 30 hoursDrain it to remove the whey at the room temperature for another 24 30 hoursAdd salt 4 g 1 2 teaspoonStore in the fridge for 2 3 weeks 背景音乐 BGM T as où les vaches By Dan boda奶油奶酪 奶油奶酪制作 奶油奶酪家庭制作 奶油奶酪做法 cream cheese homemade cream cheese
