日本料理 龍吟 松葉蟹学会発表

 

東京六本木にある日本料理店 龍吟 のスタッフ資料として作成されている料理VTRのコレクション ２０１６年９月５日 第６回 世界料理学会 in HAKODATE において chef山本がステージ上で解説しながら発表した 松葉蟹料理の進化と可能性 についての映像を公開する これは日本国内における この学会用に日本料理龍吟 六本木本店 店舗内にてスタッフチームのみで撮影 編集したものであり 学会発表用のオリジナル版から大幅に再編集したものを 今回はショートバージョンにして御紹介する これは日本料理屋として松葉蟹に対し 総合的なアプローチで向き合ってきた２０１６年２月末までの結果を１３点だけ学会発表用に収めたものである なお 松葉蟹 においては現在も継続して研究を行っており 今後も毎年新たな 松葉蟹料理 を店舗にて発表していく 日本国の食文化として 蟹専門店にて すでに確立されている 蟹料理 であるが 龍吟では毎年 松葉蟹が解禁を迎える１１月６日から１月下旬までの限られた期間だけ 松葉蟹に向き合い その多彩な魅力を引き出し 季節限定の特別コースとして予約を受け付け 本店にて提供している
