050 鯛めし〜Seasoned rice with red snapper〜

 

速水もこみち流 050 鯛めし 日本語字幕ついてます English subtitle available 增加中文繁體字幕 中文簡體字幕 材料 分量 米 3合鯛 25 30cm長さ 1尾昆布7 8ｃｍ 1 2枚水 700mlA ーーーーーーーーーーー酒 大さじ3薄口醤油 大さじ2 5みりん 大さじ1ーーーーーーーーーーーー生姜 2片木の芽 適量 調理工程 ①鯛は 三枚におろし 頭と骨はぶつ切りにする ②①の頭と骨は サッと霜降りし流水できれいに洗って水気をふきとる ③フライパンに分量の水と②を入れて火にかけ のれん状に切り目を入れた昆布を加え 沸騰寸前に昆布を取り出し 火を弱めて7 8分アクを取りながら煮出し だしを取って濾す ④米は といでザルにあげ 土鍋に入れ ③のだし 600ml を注ぎ Ａを入れて軽く混ぜる ⑤生姜はせん切りにし 鯛の身は縦半分に切って ④の上に乗せ 蓋をして強火にかけ 沸騰して蒸気があがったら弱火にし 10分炊き 火を止めて10分蒸らす ⑥炊きあがりを鯛の身を軽くほぐしながら混ぜ 木の芽を散らす ポイント 鯛を切り身だけではなく 頭 骨まで余すことなく使っている 残りのだしに薄口醤油 塩で吸い物よりやや濃いめの味をつけ だし茶漬けにし わさび 刻み海苔 白ごまなどを添えてもOK ーーーーーーーーーーー Instagram Twitter 公式キッチンブランドサイト 速水もこみち 問合せ先 mstable contact gmail com
