Vegan Cookies 3 Types Cinnamon Raisin or chocolate chip Oatmeal Blueberry Coconut and Glazed Pumpkin They are all super simple and easy to make perfect for cozy fall and winter days Let me know if you try and bake them yourself my ig mina_romeEmail minarome yt gmail comWebsite www mina rome com INGREDIENTSAll of the the shown recipes are for the sort of crispy on the outside soft cake y on the inside type of cookie if you like them thin and crispy either bake them for a few minutes longer or make them smaller to begin with 1 Blueberry Coconut 2 cups spelt flour 240g ½ tsp salt1 tsp baking powder½ cup shredded coconut⅓ cup melted vegan butter 80ml or sub with coconut oil but beware the coconut taste veg oil would be a better option3 tbsp unsweetened apple sauce½ cup raw sugar 125g ¼ cup non dairy milk 60ml ½ cup blueberries fresh or frozen yields 12 big cookies 16 18 smaller ones 2 Cinnamon Raisin Oatmeal1 ½ cups spelt flour 180g ½ cup small cut oats1 tsp cinnamon¾ tsp salt1 tsp baking powder⅓ cup melted vegan butter 80ml or sub with coconut oil but beware the coconut taste veg oil would be a better option3 tbsp unsweetened apple sauce½ 2 tbsp cup raw sugar 180g ¼ cup non dairy milk 60ml ⅓ cup raisins 50g yields about 16 small ish sized cookies 3 Glazed Pumpkin Cookies1 cup 2 tbsp spelt flour 125g 2 tbsp ½ cup whole wheat flour 65g ⅓ tsp salt¾ tsp baking powder1 ½ tsp pumpkin pie spice sub with 1 tsp cinnamon a dash each allspice nutmeg cloves ginger coriander all ground dried 3 ½ tbsp vegan butter room temperature 50g ¼ cup 60ml ⅓ cup 1 tbsp raw sugar 80g 1 tbsp 2 1 2 tbsp pumpkin purée1 tsp vanilla if needed adjust cookie dough consistency with a tbsp non dairy milkglaze ½ cup powdered sugar 62g ½ tsp vanilla2 3 tbsp non dairy milk add 1 tbsp at a time mix well then see if you need more yields 13 15 cookies Music used Much love Mina This video is sponsored by Squarespace
