International Street Food Festival Gusti di Frontiera Gorizia ItalyLA BURROLA Burrata farcita al Gorgonzola La Burrata come la Mozzarella è un formaggio fresco a pasta filata realizzato a partire da latte vaccino con la differenza che è ripieno di burro Si produce a partire dalla cagliata che si ottiene aggiungendo al latte vaccino pastorizzato i fermenti lattici e il caglio I passaggi successivi sono il taglio della cagliata e l estrazione del siero A questo punto la cagliata viene ridotta in listarelle e impastata in acqua bollente per farla filare ovvero trasformarla in mozzarella attraverso la mozzatura manuale o meccanica L ultima fase è il raffreddamento in acqua dei pezzi ottenuti La Burrata quindi si fa a partire dalla pasta filata della mozzarella ma al suo interno viene inserito un ripieno morbido e cremoso la stracciatella pasta filata sfilacciata amalgamata con la panna La Burrola è una versione speciale di Burrata ottenuta utilizzando come ripieno della morbida e cremosa Gorgonzola handmade mozzarella streetfood italianfood
