【プロが作る】大根もちの仕込み方！大公開！！　蘿蔔糕　How professionals make a radish rice cake

 

大根もち もともとは中国広州地方で生まれた春節 旧正月 料理で 香港が一般的ですが 台湾やシンガポールなどでも日常の軽食として親しまれている料理のひとつです 日本でも飲茶の流行と共にポピュラーになりました モチモチした食感 どんなソースにも合う蛋白でヘルシーな味わい 大根を蒸した甘さが やさしく口のなかに広がる 素朴な風味が人気の秘密なのでしょう しかもこの大根もち 一般的には四角形のタイル状に切ったものを焼いて醤油タレで食べることが多いようですが 煮込み 炒め 揚げもの スープの具と 実に多様の食材にも変わり 調理のアイディアをより沸き起こしてくれる そんな料理のひとつです 今回は大きめの大根４本を使い 約160枚分の大根もちの仕込み方を動画でご紹介致します さらには オーソドックスな焼いたスタイルと 私達が考案したオリジナルスタイルの仕上げをご紹介させて頂きます
