こんにちはLes sens cielです 今回は秋のスウィーツの定番 モンブランマロンを作って見ました スーパーで売っている市販のマロンペーストで作ったのは初めてでしたが口当たりが滑らかな仕上がりになってホッとしました 笑 日本とマロンペーストの状態が少し違うと思うので分量は参考程度にしてください 裏ごしして滑らかにする事と 絞りやすい柔らかさに生クリームで調整する事でモンブランのクリームにできると思います 甘さの調整とラム酒での香り付けはお好みで インスタ始めました最近 作ったよ というコメントしてくれる方が増えて来たのでもし良かったら レソンシエルレシピ で投稿してくれたら嬉しいです まだ全然投稿できていませんが少しずつ YouTubeでは載せきれない写真なども投稿していきたいと思っています 良かったらフォロー宜しくお願いします モンブランマロンMont blanc aux marronsメレンゲmeringue アーモンドプードル 50g poudre d amande 卵白 100g blancs d oeufs グラニュー糖 100g sucre 粉糖 100g sucre glaceカスタードクリームcrème pâtissière 牛乳 150g lait entier バニラビーンズ 1 4 gousse de vanille 卵 1個 1 oeuf entier 卵黄 1個 1 jaune d oeuf グラニュー糖 40g sucre 薄力粉 15g farine 無塩バター 15g beurre 粉ゼラチン 7g gélatine en poudre 冷水 35g eau froide立てた生クリーム35 250g crème fouettéeグラニュー糖 17 5g sucre ディプロマートクリーム用 サブレ生地pâte sablée 薄力粉 170g farine 粉糖 45g sucre glace 無塩バター 50g beurreマロンクリーム 参考程度にして下さい 無糖タイプのマロンペースト 430g purée de marrons 加糖タイプのマロンペースト 250g crème de marrons ラム酒 15g rhum 生クリーム35 150g crème fraîche35 日本とマロンペーストの状態が少し違うと思うので分量は参考程度にしてください 裏ごしして滑らかにする事と 絞りやすい柔らかさに生クリームで調整する事でモンブランのクリームにできると思います 甘さの調整とラム酒での香り付けはお好みで
