こんにちはLes sens cielです 今回はちょっと見た目が面白い アイスみたいなチョコケーキを作って見ました ミルクとダーク２種類のチョコムースに艶やかなグラッサージュがかかっています 下に敷いたクッキーがさっくりと食感のアクセントになっていて美味しかったです 暑い時期でちょっとチョコ系は食べる気がしない という方にも思わず手にとってみたいと思っていただけたら嬉しいです アイスみたいなチョコケーキun gâteau comme une glaceパーターボンブpâte à bombe 卵黄 ３個 3 jaunes d oeufs 水 60g eau グラニュー糖 36g sucreミルクチョコムースmousse au chocolat lactée 粉ゼラチン 1 5g gélatine en poudre 冷水 7 5g eau froide 生クリーム35 36g crème fraîche35 ミルクチョコレート 110g chocolat lactée ７割立ての生クリーム 190g crème fouettée パーターボンブ 1 2 pâte à bombe 上記ので出来た分量の1 2 ダークチョコムースmousse au chocolat noir 粉ゼラチン 1 5g gélatine en poudre 冷水 7 5g eau froide 生クリーム35 24g crème fraîche35 ダークチョコレート 95g chocolat noir ７割立ての生クリーム 170g crème fouettée パーターボンブ 1 2 pâte à bombe 上記ので出来た分量の1 2 グラッサージュglaçage chocolat noir 水 140g eau グラニュー糖 260g sucre 生クリーム35 160g crème fraîche35 ココアパウダー 90g poudre de cacao 粉ゼラチン 15g gélatine en poudre 冷水 75g eau froideグラッサージュは多めの方が作りやすく綺麗にかかるので多めの分量です 残ったものは冷凍保存ができるので 冷凍して他のケーキに使いたいと思います
