贝果 bagels 法棍 欧包 中国的馒头 锅盔 这些最传统食物都有一个共同的特点 他们的用到的材料都特别简单 基本上就是面粉 盐和水 酵母很多时候都是面粉和水培养出来的天然酵母 在那些物质匮乏的年代 对于普通老百姓来说 糖 牛奶和油都是奢侈的食材 他们只有通过时间 通过发酵才能丰富它的口感 这些食谱代代相传 到了今天这个物质极其丰富的时代 有的已经改变了它的做法 而有的还保持着它的原有风味 贝果配方 可以做8个贝果面团 水 250克 1 杯酵母 4克 1 小勺第一次用面粉 非漂白中筋面粉或者高筋面粉 180克 1 1 4 杯第二次用面粉 270克 1 3 4杯 2大勺盐 4克 1 2 小勺大麦麦芽糖浆 30克 1大勺多一点苏打水 开水 1 5公斤小苏打 15克 1 大勺大麦麦芽糖浆 10克 1 小勺蘸料 白芝麻 8克 1大勺罂粟籽 4克 1 2大勺干蒜粒 5克 1 2大勺盐 2克 1 4小勺可以加干洋葱 黑芝麻 等贝果操作步骤 1 水 酵母和第一次用面粉混合 室温发酵3小时 2 加入第二次面粉 盐和糖浆 揉面5分钟后 饧面15分钟 3 整形贝果 4 最后发酵20分钟 5 开水中加入小苏打 糖浆 6 煮贝果 每面煮20 30秒 7 粘上蘸料 8 预热好的烤箱 450 F 230 C 烤5分钟 9 翻面 再烤12分钟 Everything bagel recipeFor make 8 bagelsDough Water 250 g 1 cupYeast 4 g 1 teaspoonUnbleached all purpose flour or bread flour 180 g 1 1 4 cupsSecond time flour 270 g 1 3 4 cups 2 tablespoonsSalt 4 g 1 2 teaspoonBarley malt syrup 30 g 1 tablespoon and a little bit moreSoda water Boiling water 1 5 Kgbaking soda 15 g 1 tablespoonBarley malt syrup 10 g 1 teaspoonToppings Sesame 8 g 1 tablespoon Poppy seeds 4 g 1 2 tablespoonDried garlic 5 g 1 2 tablespoonSalt 2 g 1 4 teaspoonSteps 1 Mix water yeast and the first flour let it ferment for 3 hours at the room temperature 2 Add the second time flour salt and barley malt syrup knead the dough for 5 minutes till it smooth then let it rest for 15 minutes 3 Shape the bagels 4 Final proof for 20 minutes 5 Add baking soda and barley malt syrup to boiling water 6 Boil bagels for 20 30 seconds on each side 7 stick on the toppings 8 Bake the bagels in preheated oven for 5 minutes first at 450 F 230 C 9 Flip then bake for 12 minutes 背景音乐 BGM Butterflies In Love by Sir Cubwort貝果 贝果 bagels bagel recipe everything bagels
